Applications: MOLSTEAR® SORM is used primarily as an emulsifier and stabilizer to blend oil and water in the food industry. Increases bread and cake loaf volume, softens the crumb and improves overall texture. Promotes dairy fat emulsification, prevents large ice crystal formation and improves mouthfeel. Improves foam volume and creates a stiff, stable whipped texture.

3 Solubility It is soluble at temperatures above its melting point in toluene, dioxane, ether, ethanol, methanol and aniline. It is insoluble in cold water, and in mineral spirits and acetone.

5 Lead Not more than 2 mg/kg.
6 Acid Value Between 5 and 10.
7 Hydroxyl Value Between 235 to 260.
8 Saponification Value Between 147 to 157.

The shelf life is 3 years. Preserve in a tightly closed container.
